Sweet Potato pure
with Coconut Cream and Dragon Fruit jelly on top
I’ve had some sweet potato the other day for the first time in a long while and I couldn’t help but notice that it tasted very much like chestnuts. Well I haven’t had chestnuts for about a decade, so maybe I forgot what they really tasted like, but anyway, this gave me the idea of preparing some sweet potatoes the way I would prepare chestnuts.
I put my experimenting hat on and began by peeling and cutting a large sweet potato into cubes and boiling them to perfection, while I gathered these…
Ingredients: (serves 4)
- 1 large sweet potato
- 200ml coconut cream
- 2 tbs chia seeds
- 6 tbs honey
- 1 dragon fruit (or mango)
- 1 or 2 tbs rum
- 1/2 cup mascarpone cream cheese
Pour the sweet potato into a wire mesh sieve when ready, then with a spoon press it through the sieve into a mixing bowl. Add 2 tbs of honey, the mascarpone and the rum, them mix thoroughly. Divide the mixture into 4 cups. Pour the coconut milk into a bowl, mix in 2 tbs honey and 2 tbs chia seeds, then immediately pour on top of the sweet potato mix. You might want to wait a little bit for the chia seeds to solidify the coconut cream before you add the dragon fruit jelly. You make the jelly by blending the fruit and some honey until smooth. Do not add water. Store this refreshing and delicious dessert in the fridge for at least a couple of hours before serving.
